Snowy collaboration with Maison du Chocolat
Every year at Christmas time, the Maison du Chocolat rivals in originality by offering a collection of chocolate pieces combining meticulous craftsmanship and gourmet flavours from quality products.
This year, I was proud to accept the invitation from creative chef and MOF pâtissier Nicolas Cloiseau to collaborate on the project.

To this must be added the theme chosen by the latter for its 2023 Christmas collection: the Snowflake.
Nicolas Cloiseau's ambition was to magnify the infinitely small by highlighting its unique structure and its various layers of decomposition in the form of chocolate pieces that, in fine, act as veritable works of art.
It was after spotting the creations in my Wahlenbergbreen Mementos collection and the snowflake study I'd done, that the pastry chef, seduced by my story and my work, contacted me.
I had made a ring from this flake, and together we were going to make... a chocolate delight!
Fueled by the same passion for nature and the same attention to detail, we imagined, designed and finalized, hand in hand, what this Flocon Givré would be, chocolate-covered in black and white, to be admired as much as savored.
In the warm atmosphere of the Maison du Chocolat workshops, in contact with the thirty-five or so craftsmen who have been maintaining the recognized know-how on a daily basis since 1977, we have combined our expertise with our love of a job well done.
This truly enriching and unforgettable collaboration gave birth to the "Sous la neige" collection, with its thousand variations, an "invitation between heaven and earth", in the heart of sublime nature.
